Wine and glass pairings - a journey of flavours
Friday 17 October: one session at 4pm.
Saturday 18 October: two sessions, at 10am and 4pm.
As part of Vignobles en Scènes, we'll begin this divine moment with a guided tour of our historic cellars, followed by a visit to the more recent winery, including bottling, labelling and marketing. You'll be able to experience all the exciting stages of our winemaking profession with us!
Then, let yourself be tempted by an exceptional opportunity to discover the complexity and richness of the Jura terroir. We'll be serving 7 delicious verrines* (5 savoury and 2 sweet) with 7 wines from our estate.
The verrines are designed by Chef Christophe Bassard of the Restaurant "La Parenthèse" in Chille:
1. Cuvée Flor (Chardonnay Ouillé) - Tartar of red tuna rolled in herbs, seaweed marinade and green Kâmpôt pepper with salt
2. Les Prémices (Chardonnay en fût) - Cake with raw ham from Haut Doubs, Comté cheese and mustard cream
3. Trousseau "Cousu Main" - Verrine of pressed rabbit with trumpets and crunchy vegetable pickles
4. Tradition "2 Grains" (Chardonnay/Savagnin) - Morteau puff pastry, Comté cheese and hazelnuts
5. Vin Jaune Côtes-du-Jura - Concassé of asparagus with herbs and Vin Jaune curry mayonnaise
6.FraisNésie (Elderflower sparkling wine) - Dark chocolate sabayon, diced brownies, caramelised hazelnuts
7. Macvin du Jura - White chocolate macaroon and griottines
