When we push open the door of the Le Chamois bar in the heart of the village of Lélex, it's a little after 11am, and the first customers will soon be arriving. At this hour, the village resort bistro is still empty, and the tables and chairs are neatly arranged. Simone Grossiord emerges from the back room and stands behind the counter, ready to take the order.
