At the foot of Besançon's citadel, the Casinne restaurant offers cuisine that is as simple and rustic as it is delicious and surprising. Using organic, local and seasonal produce, the small and ever-changing menu offers meaty dishes "from head to toe", as well as vegetarian options that are just as sophisticated. Chef Etienne Bellot, who cut his teeth in London, offers a cuisine rich in flavour and character, with a range of French, British and Italian influences. The menu is accompanied by organic, biodynamic and natural wines, local beers and a selection of the chef's cocktails. The atmosphere is intimate, with service that is both relaxed and attentive.
