Celebrating the terroir of Burgundy-Franche-Comté. Bistrot Chic in the Conservatoire. A real link between Burgundy and Franche-Comté, "Loiseau du Temps", whose name evokes the watchmaking expertise of Besançon (known as the Cité du Temps), is located on the ground floor of the superb listed building known as "Le Conservatoire". Set in the Place de la Révolution, on the banks of the River Doubs, this building was successively a former granary, a watchmaking school, and finally the regional conservatory.
Every day, "Loiseau du Temps" celebrates the terroir of Franche-Comté, in an accessible way (lunch menu from 28 euros). The team is 100% from Biscay, led by chef Léo Pujol and manager Jérôme Hanriot.
