Winter specialities: gaudes with old Comté cheese from Fort Saint Antoine, gentian sorbet, grapefruit macaroonade, fine tart with Morteau poached egg.
Summer specialities: fine tart with snails and tomato, Pollack with Pontarlier Absinthe, crispy cannelloni with Macvin on pan-fried cherries.
