The beers are brewed by hand by infusion, top fermentation. They are unfiltered, unpasteurized, and refermented in the bottle by adding cane sugar in very limited quantities.
For this, the malts (barley and wheat) are selected and crushed on the spot and the hops come mainly from Alsace. The caramelised malts bring an inimitable roundness and taste.
The aromas used are natural and offer a soft and pleasant intensity. (Alcohol content between 5.0 and 9.0%).
