Since 1935, Jacot Billey has been working with the authentic Burgundy Snail with the greatest respect and love for this noble product. Today, this species is protected in France and we therefore bring it back alive from Romania and Poland, the birthplaces of the Helix Pomatia.
Traditional know-how: we are proud to be the last to process the Burgundy snail, from shell removal to buttering and canning on French soil, in Fesches-le-Chatel. Each snail is worked on by hand, at all stages of processing by experienced village women.
