In 1977, the Confrérie des Compagnons du Boitchu (Brotherhood of the Boitchu Companions) was created on the initiative of the Master Charcutiers of the Montbéliard region. In the local dialect, the Boitchu was used to designate the knife used to chop meat. Nowadays, the Compagnons du Boitchu (voluntary and devoted Master Charcutiers) promote the Boitchu in local festivals and gastronomic brotherhoods of the Grand Est. An authentic local product made according to traditional methods, the genuine Boitchu sausage is subject to rigorous quality standards guaranteed by the affixing of a seal bearing the words "Les Compagnons du Boitchu".
Presided over by the Grand Master and his committee, this venerable brotherhood holds regular chapters and inducts great tasters.
