L'Escargot Jurassien is a snail farm located in Billecul, at an altitude of 860 metres.
The story began a few years ago, in 2010, when Sébastien Saglier was on holiday in the Jura. "In love' with the region, he set up a breeding farm for 'gros gris' snails, chosen for their more tender flesh than Burgundy snails.
Everything is done by hand: every year in mid-May, the farm's snails are placed in a greenhouse "nursery", where they stay for 45 days to be protected from the cold; they are then reared outdoors in the farm's parks, where they grow peacefully on a carpet of plants adapted to their needs.
When the time comes, the produce is processed by hand in the farm's laboratory (which complies with CE standards), where Sébastien develops his tasty recipes. Using local products - including the famous butter from the Coopérative du Val de Mièges - he offers a whole range of products, labelled "organic" or "organically produced".
The packaging is original: in shells, of course, but also in terrines, cassolettes or even "Crocs'Apéro" (everything can be eaten, including the wheat shell!). When it comes to seasoning, the emphasis is on local flavours: Jura wine, wild garlic, cheese, mushrooms... These exceptional products are available all year round, in the farm shop or at local markets.
