Julien Favret, a passionate beekeeper who turned professional in 2013, has set up his Miellerie des Hautes-Joux in a former sawmill.
At an altitude of 1,000 metres, this small-scale operation, which holds the "Miel de montagne" (mountain honey) designation, has around 200 hives that produce high-quality honey that is 100% local. Its harvest is highly dependent on climatic conditions, as it is produced exclusively in mountain areas, but this particularity means that the bees spend the whole year in the same place, with no transhumance. With respect for nature and the well-being of the little workers, the various apiaries on the farm are all located within a maximum 10 km radius of the honey house.
So don't delay in visiting Les Chalesmes, where delicious nectars with unique tastes and textures await you: dandelion honey, with its discreet, sweet flavour; mountain 'all-flower' honey, floral and fruity; lime blossom honey, minty and powerful... or fir and forest honey, with its pronounced resinous aromas...
