Thibault Faivre-Vuillin is a chocolatier, patissier and confectioner based in Sapois, who creates delicious pastries and chocolates in his workshop. A native of the region, this young enthusiast works skilfully with cocoa, from the bean to the finished product.
The excellent quality beans he uses come from Colombia, Belize and Venezuela. Using a complex and meticulous process, Thibault roasts them, then crushes and hulls them. He then transforms them into cocoa liqueur or mass before adding sugar to enhance the flavours. Fine bars, praline, ganache or caramel confectionery, spreads or chocolate-covered vanilla marshmallows... So many tasty products to convince the most demanding palates.
Adjacent to the workshop, the sales area showcases all these preparations made entirely on site.
