A former mill has been renovated into a three-star hotel offering two styles of cuisine, one gourmet and the other brasserie-style, located very close to the historic centre of Dole. The Moulin des Ecorces is located on a peninsula along the Doubs, offering a naturally rejuvenating setting, hence the motto of the house "the well-being of nature in the city centre".
The bistro offers simple, generous cuisine, prepared with quality local produce.
