Chèvrerie de la Vallée Verte

The Chèvrerie de la Vallée Verte is a goat farm created by Janick Maronnat in 2006 in Mont-sur-Monnet, then moved to the commune of Montrond. It is here, in the heart of a farm of more than five hectares, that sixty or so goats graze peacefully, their food being supplemented by cereals distributed twice a day, at milking time. The milk is processed into cheese using rennet and whey from previous processing operations as the ferment, thus ensuring a consistent cheese quality. Around 160 litres of milk are processed each day to produce a very fine paste in a variety of forms: fresh "natural" or flavoured cheeses, semi-dried or mature cheeses with stronger flavours, ashy cheeses or even logs and corks for the aperitif... Not forgetting the speciality of the goat farm: the "Camenchèvre", a round cheese shaped in a pressed mould. Aged for three weeks, it remains soft and smooth in the mouth. Janick also sells very smooth faisselles. All these products are available for sale directly on the farm, as well as in several local shops (fruit shops, grocery shops, etc.).
