Fruitière de Passavant-Chazot
The emblem of the Jura mountains, Comté cheese is one of the treasures of our region. It is made in the fruitières. By the way, do you know where the term "fruitière" comes from?
A fruitière symbolises the fruit of the labour of farmers who pool their milk production, the work of the cheesemaker who transforms the milk into cheese, and that of the ripener in his cellars who patiently works each wheel to bring out its full flavour.
It takes around 450 litres of milk to produce a wheel of cheese weighing around 40 kilos.
Benoît Cantin will be delighted to show you around his cheese dairy, where comtés (around 37 a day!), butter and cream are made. You'll find these products for sale in the shop.
