From the collection of the milk to the maturing cellar, via the production workshop, Thibault, the cheese maker at the Fruitière des Coteaux d'Ornans, will reveal all the secrets of the famous Comté cheese.
Every year, the Comté cheese dairy of the Coteaux d'Ornans processes 2.7 million litres of milk delivered by the 10 farms in the communes of Ornans, Echevannes, Guyans-Durnes, Durnes and Voires. The Comté cheese is matured in Poligny by the Vagnes cheese makers.
