William Handal raises a flock of 65 red-headed Manech ewes on 20 hectares of land.
A recently settled farmer with organic farming accreditation, he is developing an integrated, sustainable farm, offering quality dairy products so that "we don't just put anything on our plates".
He processes the milk into different types of cheese: fromage frais, soft cheeses such as Pérail, Feta and Tome (plain and smoked), and stirred yoghurt.
The plan is to set up gîtes and sell these products through various outlets. To be continued...
