In common with all AOC Bugey-Cerdon wines, all wine produced at the Renardat-Fache vineyard is made using the méthode ancestral fermentation technique from Poulsard and Gamay grapes. This method of vinification allows the wine to ferment naturally without having to add any extra sugars or yeasts. The first fermentation takes place in a vat and during this time the temperature of the wine is kept constant to ensure the lovely pink colour. The wine is then filtered and bottled and it is in the bottle that the second fermentation takes place which gives the wine its distinctive bubbles and fizz.
