Domaine des Cavarodes

Etienne Thiebaud founded Domaine des Cavarodes in 2007, in the village of Cramans, about 15km from Arbois in the northern Jura, close to Arc et Senans. He makes incredibly pure wines that reflect the terroir on either side of the Loue, in the Jura and Franche-Comté. At present, he has just 4.5 hectares of vines (aged between 15 and 115 years), which he cultivates organically, but he already produces a number of cuvées with a strong identity. The wines are made as naturally as possible, sometimes without sulphites, and the reds undergo semi-carbonic maceration after careful destemming and maturation in old barrels. The main vineyard sites are - Lumachelles in the commune of Mouchard just north of Arbois, which produces a Chardonnay, a Trousseau, a Pinot Noir and a Poulsard - Guille Bouton in Arbois, which produces a superb Chardonnay - Les Messagelins, also in Arbois, which produces a Poulsard, a Trousseau and a Chardonnay.
