L'Anversis - Table de Montagne is a semi-gastronomic restaurant with a unique identity, located in Lamoura, in the heart of the Les Rousses resort.
It offers a 3-course menu inspired by the region's gastronomic heritage, featuring emblematic local produce: morels, vin jaune, absinthe, trout, arctic char, wild plants, mountain honey, game, snails, truffles, wild blueberries, Comté cheese, Morbier cheese, Haut-Jura blue cheese, etc.

The menu features seasonal, responsible and committed cuisine

- Artisanal ice creams made by local farmers
- Raw milk cheeses from independent farms

The cellar offers 450 references of natural and biodynamic wines from the Jura, Burgundy and the whole of France, as well as a unique selection of 20 absinthes, served at the fountain.

The restaurant is committed to an eco-responsible approach, favouring exclusively seasonal regional sourcing, with mostly organic and natural products, guaranteeing healthy, environmentally-friendly cuisine. To limit food waste, it has introduced rigorous stock management, recycles leftovers and composts organic waste. Waste management is also responsible, with selective sorting and recycling of packaging. Energy and water savings are optimised through the use of high-performance equipment, LED lighting and an adapted timetable. The cellar offers a selection of organic, biodynamic and natural wines, mainly from the Jura, Burgundy and other regions, chosen for their quality and respect for the environment. Socially and regionally committed, the restaurant works with regional producers and craftsmen, grows a kitchen garden of herbs on site to guarantee freshness and proximity, and chooses eco-responsible furniture and decoration based on recycled, natural and second-life materials. This approach enhances the authentic taste of the products in a totally transparent, unadorned way.
